The Coolgardie safe is an Australian invention from the 1890's that use evaporative cooling to preserve food. It's a cabinet with an evaporative cooling system that involves a water reservoir, a wicking material like hessian or felt, and a breeze to facilitate evaporation. This evaporation absorbs heat, creating a cool environment inside, and the wire mesh protects food from insects and vermin.
